Though Latino cuisine is eagerly embraced and consumed by people across the United States, the nation exhibits a much more fraught relationship with Latino people, including the largely underpaid immigrant workers who harvest, process, cook, and sell this popular food. Focusing on the Northeastern United States, Dr. Lori A.
